I don't have a pricey, fancy, recipe. Just one that makes me think of my loving mom, may she rest in peace.
When I was a kid growing up, we didn’t have much money, but mom could make a feast out of anything.
I always think of her when I make these simple quesadillas...
1 Tablespoon of olive oil
Corn Tortillas (flour if you want)
Warm up a skillet to a medium heat. You’ll know it’s ready when water dances off the warm skillet.
Spray the skillet with PAM olive oil spray.
Add a tablespoon of olive oil.
Add CORN tortillas, and let them cook for 30 seconds on one side.
Turn over and add your favorite cheese.
Combining cheddar and havarti is a good combo!
Wait till the cheese begins to melt, then fold over with your spatula.
Continue cooking till desired crispiness.
Add a dollop of sour cream, and cilantro
Add hot sauce if you like it spicy.
Serve with sliced avocado on the side.
