Strawberry Banana Mini Muffins

  • 1¼ cup flour

  • ¾ cup sugar or less if you have really ripe bananas

  • 1 tsp baking soda

  • ¼ tsp salt

  • 1 tsp vanilla extract

  • ½ cup grape seed oil

  • ½ cup chopped walnuts

  • 2-3 ripened bananas

  • ½-¾ cup chopped strawberries

  • 2 eggs

  • Optional: You can add extras like chocolate chips


  1. Preheat oven to 350 degrees

  2. Mix the dry ingredients together. Mash the bananas with a fork. Mix in the eggs and vanilla extract. Add to the dry ingredients and mix. Then add the chopped strawberries and walnuts.

  3. Grease a 24 mini muffins pan. And if you have a small loaf pan for the extra batter grease that too.

  4. Fill to the top or ¾ full. Bake 15-17 mins. Should be golden brown and test with a toothpick. Bake the mini loaf for 20 mins.

  5. Let cool.

  6. Store at room temp in a sealed container.
