Ingredients:
1¼ cup flour
¾ cup sugar or less if you have really ripe bananas
1 tsp baking soda
¼ tsp salt
1 tsp vanilla extract
½ cup grape seed oil
½ cup chopped walnuts
2-3 ripened bananas
½-¾ cup chopped strawberries
2 eggs
Optional: You can add extras like chocolate chips
Directions:
Preheat oven to 350 degrees
Mix the dry ingredients together. Mash the bananas with a fork. Mix in the eggs and vanilla extract. Add to the dry ingredients and mix. Then add the chopped strawberries and walnuts.
Grease a 24 mini muffins pan. And if you have a small loaf pan for the extra batter grease that too.
Fill to the top or ¾ full. Bake 15-17 mins. Should be golden brown and test with a toothpick. Bake the mini loaf for 20 mins.
Let cool.
Store at room temp in a sealed container.
