Turkey Chili

Here is the yummiest, easiest turkey chili recipe. It is an absolute go-to meal we make regularly in our home, because it is easy, healthy and EVERYONE loves it!
I usually add Hatch green Chili to crank up the heat.

Ingredients

  • 1 yellow onion chopped

  • 3 cloves of garlic chopped

  • 1 package ground white or dark meat turkey (or do a mix of both)

  • 1 can black beans drained and rinsed

  • 1 can kidney beans drained and rinsed

  • 1 can white beans drained and rinsed

  • 1 Large can diced tomato (be sure if doesn’t have basil)

  • 1 cup frozen corn

  • 2 Tlbs olive oil

  • 1-2 packages taco seasoning (no MSG)

  • salt to taste

Directions:

  1. In a large pot set to medium heat add olive oil, onion and garlic saute for a few minutes, till the onions are translucent.

  2. Add ground turkey and brown, breaking it up constantly with a wooden spoon.

  3. Add a little bit of taco seasoning as you go.

  4. Once the turkey is browned, lower the heat and add the beans and more seasoning.

  5. Incorporate the beans with the turkey and then add the tomatoes with the juice and the rest of the taco seasoning.

  6. Gently stir everything together taking care so you don’t break all of the beans.

  7. Add the corn and mix in.

  8. Turn heat to low and let simmer, stirring every once in awhile for as long as you can, minimum 30 minutes.

  9. Taste and adjust the seasoning.

  10. Serve with sour cream, shredded cheese, diced avocado, scallions, tortillas chips, cilantro, lime wedges and hot sauce.
