Jenna's Easy Social Distance Lemon Salmon and Veggies recipe w/ a simple Stay the F* Home cocktail
I've always wanted to know how to cook a salmon properly. Without fail, I overcook it until its dry and chewy, so I rarely enjoyed a home cooked salmon, until now...!
During quarantine, I've been cooking up a storm and was determined to conquer a good salmon dish. I turned to my food and wellness blogger, Nicole Cogan (@nobread) for a delicious and easy way to cook salmon. Thanks to her, it's all we've been eating!!! This is fool proof and you'll get a buttery and delicious tasting salmon filet. Hope you enjoy!!
Baked Lemon and Pepper Salmon
4 oz salmon
½ a lemon
salt and pepper
½ white or yellow onion
handful of cherry tomatoes or (broccoli chopped or spinach, could be anything!)
Cover baking sheet in tin foil, set oven to 400 degrees.
Marinate salmon by squeezing half a lemon (careful of the seeds!) and some light salt and pepper on both sides.
Bake skin down for 12 ½ minutes (thicker salmon 4 oz + may take a minute or two longer, use your best judgment)
While that is cooking...
I sauté some cut onion slices, cut zucchini into quarters and slice the cherry tomatoes in half in a tbsp of avocado oil or olive oil on the pan.
Sauté the onions first for a minute or two and then add the rest of the veggies and sauté until hot! Add salt, pepper and a touch of garlic salt and chili peppers to taste.

My cocktail is not impressive but if you like VODKA, you'll like this!
I use 1 shot of TITO'S vodka because its delicious and gluten free but any vodka will do
Any flavor of Spindrift or La Croix or just bubble water (usually about half the can).
Squeeze the other half of the fresh lemon you used for the salmon marinade, to freshen up your drink! VOILA!
